It's a shame because a couple of 'bad points' mean I can't give the hotel a rave review.
First the positives.
The staff are excellent. Very helpful, polite and provide a great service.
The hotel is in a great area, there are many bars and restaurants in Grassmarket and it's only a 5 min walk up to the high street (Royal Mile).
Breakfast is fantastic, it was included in our rate and we both thought it was the best hotel breakfast we have ever had.
Negatives
We stayed in room 2111. We had a nice view of the castle but....
The room, and hotel in general, was boiling! Far too hot for comfort, I know it's winter outside but the room in particular was ridiculously hot. Changing the thermostat had no effect whatsoever. In the end we opened the window overnight to let cold air in, but this meant that we had a lot of noise but we had to do it as it was unbearably hot.
Right outside of our room there were a couple of PC's set up for free internet access (great idea) but there were also sofa's and chairs which meant people used the area as a 'lounge' meaning day, night and early hours of the morning you had people out there talking, laughing, shouting even whilst they had a chat rather than go to someone's room. Simple answer is to remove the sofa's. Bit of bad planning really.
Overall, we did really like the hotel and the area but these two points just make us knock the rating down a bit. It would have been a 9/10 without the above issues.
“ Top Tip: There is a Thai restaurant a few mins from Grassmarket, up toward Lawnmarket. Called the Thai Orchid......it is excellent!!

“ In a great location within walking distance to anything you would want to see in the city. Staff were very friendly and helpful. I would recomend this hotel to others and stay here again.
“ Top Tip: The cloisters pub was very welcoming and has some great ales on tap.

“ A very pleasant hotel, ideally located in the Old Town, close to the Castle and interesting bars and restaurants. Some of the hotel facilities looked a little tired but the staff and service were excellent. Would recommend.
“
Top Tip:
Small French restaurant opposite (Petit Paris) excellent food and value. The Beehive Inn and Last Drop Tavern were welcoming bars with good wholesome food.
Bus stop for journey to Leith (Royal Yacht Brittania, and Ocean Terminal shopping) within a few hundred yards.

“ The hotel is centrally located in the Grassmarket within walking distance or a short taxi ride from Waverley Station, near to the Royal Mile and with lots of restaurants and pubs nearby. The bedrooms are beautifully appointed, clean and modern. Breakfast is cooked to order and there is a good selection of fruit, cold meat, cheese, croissants and pastries. We booked two twin rooms and one of them was upgraded to a very nice superior room. Both rooms had castle views. All the staff we met were pleasant, courteous and helpful. I would definitely stay at the Apex City Hotel in Edinburgh again and will recommend it to friends.

“ A very clean, modern hotel and in a great location for what we needed.
“ Top Tip: Situated in the middle of the historic Grassmarket, directly behind Edinburgh Castle. Numerous pubs, cafes and restaurants around. Went to a gorgeous Italians called Genaro. A little expensive but very good food.
